Event Details
Join us for a one-of-a-kind culinary experience that pays homage to Polish traditions and childhood favorites, presented in a whole new way. Buffalo-born chef couple, Caitlin and Brent Esposito of Espo's Catering, are teaming up with Chef Evan Wargo to bring their innovative take on Polish classics to your plate.
5:30-6:30 p.m.
Passed Hors-d'Oeuvres & Welcome Cocktail
6:30-8:30 p.m.
First Course
White Borscht – toasted seeded rye bread, sour cream, vinegar, decorative hardboiled egg, smoked sausage
Second Course
Mizeria – cucumber ribbons, sour cream, sea salt, cucumber spheres
Third Course
Golabki – traditional stuffed cabbage, ground beef, tomato sauce
Fourth Course
Pierogi – farmer’s cheese, potato pierogi & polish sausage, onion soubise, chive blossom
Fifth Course
Paczki – Lemon curd filled fried dough

Alexa Wajed
Alexa Wajed and resident Chef Evan Wargo teamed up to create a menu that not only celebrates the flavors of hip-hop culture, but also incorporates heirloom vegetables and minimizes food waste by creatively using all parts of the ingredients. Acclaimed local artist Edreys Wajed, husband of Chef Alexa, showcased his hip-hop inspired works, setting the stage for a multi-sensory journey.

Rocco DiSpirito x Smita Chutke
An expert in healthy eating, Rocco DiSpirito is a James Beard award-winning chef, acclaimed author, and TV personality. Local chef and spice maker Smita Chutke reinforces authenticity by applying traditional Indian cooking methods to seasonal flavors and ingredients found here in Western New York. Together with Chef Evan, they have collaborated on a cohesive menu that celebrates their culinary journeys and showcases their signature cuisine and cooking style.
