The best ingredients are the heart of the most memorable meals. Join us on Wednesday, June 28th as we flip the Guest Chef Series script and celebrate Buffalo's best producers and purveyors.
Our evening begins with a special reunion with some of our former guest chefs over cocktails in the courtyard. Meet, mingle and enjoy passed appetizers. Then, head to the dining room for the main event: Chef Evan Wargo's curated dinner menu. Each of our four courses — plus passed appetizers at cocktail hour — feature dishes inspired by our local partners' finest ingredients. Whether it’s the butteriest Wagyu, the creamiest cheese or the freshest produce, their incredible talent is essential to our pursuit of perfection.

To bring a fresh twist to beloved Polish dishes, Chef couple Caitlin and Brent Esposito, hailing from Buffalo and proprietors of Espo's Catering, collaborated with Chef Evan Wargo. Drawing upon Caitlin's cherished family recipes and fond childhood memories, the trio crafted a menu that garnered great pride from the Polish community.

Alexa Wajed
Alexa Wajed and resident Chef Evan Wargo teamed up to create a menu that not only celebrates the flavors of hip-hop culture, but also incorporates heirloom vegetables and minimizes food waste by creatively using all parts of the ingredients. Acclaimed local artist Edreys Wajed, husband of Chef Alexa, showcased his hip-hop inspired works, setting the stage for a multi-sensory journey.

Rocco DiSpirito x Smita Chutke
An expert in healthy eating, Rocco DiSpirito is a James Beard award-winning chef, acclaimed author, and TV personality. Local chef and spice maker Smita Chutke reinforces authenticity by applying traditional Indian cooking methods to seasonal flavors and ingredients found here in Western New York. Together with Chef Evan, they have collaborated on a cohesive menu that celebrates their culinary journeys and showcases their signature cuisine and cooking style.
