Executive Chef - Panevino
Tony Guglielmelli, Executive Chef of Panevino Ristorante in Livingston, New Jersey, has the love for cooking in his blood. Born in New Jersey to Italian-American parents, Tony started cooking when he was young boy. Every Sunday, Tony assisted his grandmother and mother creating a feast worthy of Italy for his large Italian family.
During high school Tony worked at his 75-year-old uncle's catering company. As his uncle's apprentice, Tony learned key cooking techniques and old family recipes. He also learned that he was talented in the kitchen. After graduating school, Tony went straight to the kitchen of a local bar and grill in Hoboken NJ. After briefly working as a cook, he was quickly promoted to Executive Chef.
Next, Tony went to work for Restaurant Associates (RA). As sous chef at the RA-operated Embassy Suites Hotel in New Jersey, he specialized in authentic Italian cuisine. After being promoted to Executive Chef, Tony had the opportunity to work at a new RA restaurant, Naples 45, an authentic Italian pizzeria and ristorante, located in the MetLife Building in Manhattan. After the successful opening, RA offered Tony a chance he couldn’t beat- an executive chef position at Panevino Ristorante, an Italian restaurant in Livingston, New Jersey.
Today Panevino Ristorante and Chef Tony still is a perfect match. Chef Tony uses only the finest Italian ingredients and even goes as far as using only strictly Italian milled and grown flour for the pizzas. Specialties include housemade pasta with veal meatballs and spicy tomato sauce; pizza made in wood burning ovens; and authentic tiramisu.
