A graduate of the French Culinary Institute in New York City, Branez studied with Master Chef Christian Foucher and has been crafting his culinary skills since 1987. Prior to his studies, Branez worked alongside Chef Rick Moonen at the Century Café, where he eventually became Executive Sous Chef. After receiving his degree, he moved on to hone his culinary skills during stints at Bar Lui, The Water Club and Le Bar Bat. He finally settled down at Patina Restaurant Group in 1992 where Executive Chef Sappi Rengli showed him the ropes and worked closely with him at American Festival Café (now Rock Center Café). Branez has been with Patina Restaurant Group ever since.
