HUGO VELTMAN
Executive Chef- Pinot Bistro

Born in Holland, Chef Hugo Veltman has always been intrigued by the culinary world. At age 13 he moved to America with his family, and worked in the local eateries. At 18, he decided to move back to Paris to pursue his culinary dreams and broaden his palate. He spent these years at La Verenne, earning his classic cooking degree, while working in many famed Parisian kitchens.
Upon returning to America, Veltman worked at culinary hot spots including the legendary restaurant Charlie Trotters. It was there where Veltman met renowned Chef Joachim Splichal and discovered their shared passion for preparing traditional dishes with big, bold flavors.
In 1993, Veltman moved to Los Angeles where he reconnected with his long-time mentor, Joachim Spilchal and became the Sous Chef at the original Patina on Melrose Avenue. After working at Patina for several years, he worked as a private chef and then became the Executive Chef for Sony Studios. Veltman returned to Patina Restaurant Group in 2008 as the Executive Chef at Pinot Bistro.
