FRESH OFF THE BOATS, A SEAFOOD HARVEST

This summer, get direct access to the daily catch, fresh off the fishing boats, with a series of dishes inspired by Montauk's famed seafood heritage. Executive Chef Yuhi Fujinaga's new menu offerings highlight the prized natural qualities of each fish, selected for maximum freshness, at the peak of flavor.

At dinner, we’ve designed a new, tempting Three-Course Prix-Fixe ($49 pp) experience, including additional options for you to explore from this seashore menu of irresistible and palate pleasing creations.

Let your knife and fork sink effortlessly into silky and mildly sweet Long Island Black Sea Bass with baby greens and ginger-soy; after having plucked-away at a bowl of beer braised Long Island Wild Mussels with Spanish Chorizo, creating a savory broth for your grilled sourdough-dipping pleasure. If your dining partners are so inclined, they may offer to share one of their crispy Beer Battered Soft-Shell Crab with fennel-carrot slaw and citrus vinaigrette; or grilled and buttery Tilefish with Manila Clams and Mussels, resting in a shellfish liquored broth, brightened with garden herbs and baby vegetables.

Yuhi Fujinaga Executive Chef – The Sea Grill Born in Japan and raised in Honolulu, Hawaii, Executive Chef Yuhi Fujinaga is classically trained and was educated at the Culinary Institute of the Pacific (University of Hawaii Kapiolani Community College). He has had the rare opportunity to study under some of the most celebrated culinary masters of the world: Iron Chef French Hiroyuki Sakai, at La Rochelle, where he honed his fine-dining skills; Chef Christian Delouvier at Lespinasse; and then with Chef Alain Ducasse at Ducasse in the Essex House. His history with The Sea Grill goes back to when Ed Brown established the restaurant as one of the top seafood destinations in the New York City, appointing Fujinaga as his executive sous chef. Later, he worked with Ed again at Eighty-One, yet another Michelin-starred restaurant to add to the ones where he cooked in Spain during a period of study and research. Later, he became the Chef de Cuisine at Bar Basque, which received positive critical reviews, before coming back home to The Sea Grill.
