Tell us about your style and the new menu at The Wine Bar?
I have a style that is very eclectic and pulls inspiration from a number of different regions and techniques. I wanted that to reflect in the menu at the Wine Bar. It has a strong foundation in Mediterranean (Spanish, Italian, North African, Greece, Portuguese) cuisine while still having those bold and vibrant California flavors.
What are your favorite ingredients you love to work with?
A few of my favorite ingredients include: Eggs (They can be used for so many different applications and their flavor is so versatile.) Salt (The essential ingredient in ANY kitchen.) Cheese (A beautiful mixture of science, creativity, and love that makes me smile every time I taste a piece.)
What or who influenced your cooking style?
My family has always been a very strong influence. Even as a child, I grew up eating whole roasted pig's head, octopus, and other exotic ingredients. My grandmother taught me about the love of cooking and the joy that it brings to families. My mother showed me that cooking was a way to bring people together. My first chef Mark Hopper taught me that cooking was also a science, discipline, and a way of life. Jon Shook and Vinny Dotolo of Animal also helped to shape my stylistic view of food and the use of contrasting ingredients. I have been very lucky to have been surrounded by people that have such great love and philosophy for the culinary arts.
What is your favorite thing to eat at home?
Leftovers. I love to go through my fridge and utilize whatever ingredients I have on hand to make something new and surprising.(Also it's quick to make.)
