Franck Deletrain Executive Chef - Cafe Centro and Beer Bar “Deletrain is to fish what Martha Stewart is to ribbons” was one of many references at The James Beard Foundation’s honor dinner regarding Deletrain’s relationship with the sea. French-born Franck Deletrain grew up not in his native France, but in the Italian Dolomites in the town of St. Antonio, Veneto. He graduated from Italy's premier culinary institution, Scuola Alberghiera di Recoaro Terme in Vicenza, at the top of his class in 1981. It was there where Deletrain cultivated his love for fish. Upon arriving in the United States, for the next five years, Deletrain served at The Sea Grill, The Four Seasons and finally as Executive Chef at Patroon which was awarded three stars from The New York Times. Combining his roots in Northern Italy and traditional French cuisine, Deletrain now serves as Executive Chef at Café Centro. |
