Stephen Rosenbluth Executive Chef - Nick & Stef's Steakhouse Born and raised in New York, Chef Stephen Rosenbluth blends an American style with a European sensibility. He learned his culinary technique from his Yugoslavian grandmother at a young age and then honed his craft alongside top chefs in restaurant kitchens around the world. Rosenbluth began his professional career at Naples 25 in Manhasset and then moved to Switzerland to work at the busy Aarauerhof. Upon his return to the U.S. he worked at the legendary Brasserie, under Chef Luc Dimnet, whom he credits as being a mentor. He then worked at Naples 45 before becoming Executive Chef at Nick & Stef's Steakhouse in late 2007. Rosenbluth's technique and style is seasonal and American, relying on fresh ingredients and creativity. His signature dishes include unusual produce such as organic roasted chicken with fava bean mash and morel mushroom sauce. An advocate for steaks sized for two, Rosenbluth's favorite cut to work with is Bone-In Rib Eye for its flavor and elegant marbling. An Asian influence is felt in some of his dishes, such as seared yellowfin tuna with chinese broccoli and ponzu sauce. |
