Jawn Chasteen Executive Chef - The Sea Grill A graduate of the Culinary Institute of American, Jawn Chasteen's philosophy is to serve the freshest seafood possible with the least amount of time from the sea to the table. He sources fish and vegetables from sustainable and local farmers and fisherman. Chasteen has worked in restaurants including New York's Osteria del Circo, Danube, Payard Patisserie & Bistro and eventually as Executive Sous Chef at Geoffrey Zakarian's famed Town restaurant. After three years of serving as the Chef de Cuisine at The Sea Grill, Chasteen's culinary talent led to his role as Executive Chef in 2008, carrying on The Sea Grill's legendary tradition of ingredient-driven and inventive seafood cuisine. |
